Chuck Roasts are used for a pot roast or stew, because the connective tissue melts as the chuck braises and self-bastes the beef, making it very tender. Braise or slow cook in liquid for meltingly tender meat.
Cook covered in the oven until fork tender, then remove the lid to allow the braising liquid to thicken. This will provide delicious pan juices to pour on top of the finished meat.
